im home a lot on weekdays pottering around the house and working on newly hatched projects. but when it comes to lunch, inspiration always strikes too late and i end up eating instant ramen, leftovers or sometimes just a slice of toast. last night in between classes, i had a no show student so i wandered around the supermarket near to my school and bought up a storm...
adapted from simple recipes, i whisked this up as a mid-week treat!
how glorious it look!!!
:: cobb salad recipe with a twist of zhing::
4 huge leaves of romaine
1/2 bunch of watercress, coarse stems discarded
(greens are rinsed, spun or patted dry, and coarsely chopped)
2 slices of bacon
1/2 ripe avocados, seed removed, peeled, and cut into 1/2-inch pieces
1 tomato, seeded and chopped fine
1 hard-boiled egg
2 tbsp chopped fresh chives
2 tbsp of creamy japanese dressing
1 tsp Dijon-style mustard
Salt and pepper
1 tbsp olive oil
a sprinkle of sesame
a sprinkle finely grated cheddar
** and toasted walnuts. but i forgot to throw it into the bowl until i was 80% done. it lends a nice flavour and an oomph to the salad! :)
in just 20 mins, i had a beautiful lunch and feeling even more genki to rule the world! :) definitely worth the extra effort! i can't wait to try recipes from beautybox's 7-day salad handbook (free download here). the hawaiian salad in there has my name on it!!
