in the kitchen:: estafado de pollo

as the weather turns cool, my tummy is always craving for warm and cosy meals. in my world, that translates to soups and stews. here is one of my favorite things to make. estafado is a spanish beef stew. i got the recipe from bleubird vintage. but i changed things up a little this evening. and made it with chicken - hence... estafado de pollo.


what i love about this recipe is, the ingredients are super simple! 
here's what you need:: 

3 large carrots (and any leftover veggie)
1 yellow onion
2 cloved minced garlic
3-4 potatoes
1 lb. bite-sized chicken
1 cup of good white wine
1 cup of water
1/3 cup flour
small can of peas (or frozen)
3 bay leaves
extra virgin olive oil
salt and pepper


- sauté the vegetables (all but potato) & garlic in oil. 
- add in the meat, brown it to seal in the juices.
- add flour as a thickening agent and then add wine & water. 
- bring it to a boil then throw in the bay leaves then simmer for a loong long time! (mine - 90 mins)
- pan-fry the potatoes, drain & salt (this is daniel's favorite part. i find myself losing a whole chunk of potatoes in the process..)
-serve it up with toasted garlic french loaf and a glass of wine! 

voila! how's that for an easy dinner! :)

p.s. some of you commented about how i "present" my ingredients in little bowls. i have a little secret... whenever i "make" dinners on weekdays, i do the mise en place and off to work. then the husband comes home to a tonne of post-it notes and cooks it up. so most of the time, you see pictures of it in the day. but seldom the end product.

p.p.s. also, he'd like me to point out that its debatable who actually "made" dinner.

    I'll usually cook it the night before and if its soups or stews, K come home and heats it up. Way simpler than cooking :)
